The best way to eat a cannoli is standing on the street just outside the pasticceria from which it came. On a sunny April afternoon. In Italy. Trust me. Today, I’m giving you a recipe for these cannoli cream puffs. Choux pastry may not be Italian, but it’s quicker and easier than making cannoli shells. I ate these on the fire escape of my Brooklyn apartment on a sunny day in May: a suitable approximation.

I have never loved the flavor of store-bought candied orange peel, a classic garnish for Sicilian cannoli. I’ve found that a bit of grated orange zest and some chewy dried apricots folded into the cream make a delicious alternative.
